Default Spicy Chicken

Another one from the Healthy Grilling book - have made this for lunch tomorrow - good hot or cold.

2 Servings

2 x chicken allowance breast meat cut into strips

mix together
1 tbsp oil
juice half lime
1/8 tsp cayenne
1/4 tsp ground coriander
1/4 tsp ground cumin
1 tbsp fresh thyme
1 clove garlic crushed

add chicken, coat well in marinade, cover and refrigerate 3 - 4 hours.

Then just whack on George Forman until cooked, turning once.

Lovely - quite pleased with myself

Know we are not supposed to cook with oil, but actually most of it got left in the marinade dish!!

Very exciting restart Monday 3 May.
Ticker with actual weight when I'm brave enough - guessing need to lose at least 15kg and will peek at scales when lost 10ish
Week 1 - 0.9kg (half week)
Week 2 - 1.0kg
Week 3 - not weighed
Week 4 - not weighed
Week 5 - not weighed
Week 6 - 2.5kg
Week 7 - 0.0kg
Week 8 - 0.7kg gain!
Week 9 - not weighed
