Default Apple Mountain Bread Parcel

I have just tried the apple mountain bread parcels as suggested by Smedley last month and it was absolutely delicious! I wish I had tried it earlier. This is how I made it: I chopped an apple and cooked it in the microwave for 4 minutes with a half teaspoon of Splenda and a teaspoon of cinnamon. When cooked I mashed it all up together with my allowance of sesame seeds and put the mixture into the middle of a mountain bread. Then I folded the bread on top of the mixture and sprayed it lightly with 1 cal and sprinkled a little more Splenda, cinnamon and a few sesame seeds. I then put it onto a baking tray and cooked it in the oven for about ten minutes on 170º and voila! It really was delicious and very filling. It felt like I was being naughty too! Thanks Smedley x

Sounds delish Angie! Must try it! Do you have a recipe for the mountain bread pizza that has been mentioned previously? I'd love to try it!

Hi Kirsten,

All I do for the mountain bread pizza is used my tomato allowance of tinned, chopped tomatoes and spread it all over my mountain bread, then I grate my allowance of half fat cheddar and sprinkle it over the top and grill, and that's it! It's so simple and I love it! You could add some onion, mushrooms, any veggies really, herbs and use other cheeses, but I love my plain version. I usually dry-fry mushrooms separately with black pepper and put them on the side of the plate - it makes my meal look bigger!

Good luck if you try it - I'm sure you'll love it x

Think this is the original - just a variation on a theme - just tastes soooo good. You can achieve similar thing using ryvitas - i use them if I've run out of mountain bread - obviously more crunchy - but also more substantial

Default Pizza et-al

You should get yourself one of these:

http://www.amazon.co.uk/Quickachips-.../dp/B001TKTK0G

Makes Moutain bread pizza and other baked items crisp on the bottom.

Super invention! Also excellent for celeriac chips.

I managed to pick one of these in my local pound shop yesterday - haven't tried it yet, but for £1 you can't go wrong! Keep your eyes peeled!
